Garlic Bagelettes Salad

(Makes 2 serves)


2 Roma tomatoes, chopped

¼ cup pitted Kalamata olives

½ cup Lebanese cucumber, chopped

¼ cup tightly packed flat parsley leaves

8 baby bocconcini, halved

8–10 x Waterthins Garlic Bagelettes, broken into pieces



1 tablespoon extra-virgin olive oil

1 teaspoon balsamic vinegar

¼ teaspoon brown sugar


To make the salad:

Place the tomatoes, olives, cucumber and parsley in a salad bowl. Stir in the bocconcini, Bagelettes, dressing and toss gently.

To make the dressing:

Mix all the ingredients in a small bowl and stir until well combined.


As an accompaniment to barbecued meat or as a light meal.
