Onion Soup with Cheese and Garlic Bagelettes

(Makes 4 serves)


1 tablespoon butter

1 tablespoon vegetable oil

500g brown onions, peeled and sliced

2 teaspoons brown sugar

2 teaspoons flour

750mL (3 cups) beef stock

8 x Waterthins Bagelettes – Garlic

Grated Parmesan cheese


To make the soup:

Heat the butter and oil in a large saucepan over a medium heat.

Add the onions and stir occasionally until golden brown and soft.

Add the brown sugar and flour and cook, stirring for 2–3 minutes.

Stir in the stock and bring to the boil.  Lower the heat and cook, covered, 30–40 minutes.

To make the Cheese and Garlic Bagelettes:

Sprinkle cheese over the Bagelettes and grill until golden.

To serve:

Place soup into warmed serving bowls and top each with Cheese and Garlic Bagelettes.
