Thai Inspired Canapes

(Makes approx. 12 serves)


1 banana leaf

½ cup crème fraîche

12 cooked / peeled prawns

2 finely shredded kaffir lime leaves

1 finely shredded red chilli

¼ cup finely shredded shallots

Juice of ½ lime or to taste

1 tbs Thai sweet chilli sauce

Baby coriander leaves and finely chopped toasted peanuts to serve

To make: 

Cut banana leaf to fit a serving plate.

Spread crème fraîche on top of each cracker, top with a peeled prawn (leave tail on if preferred).

Sprinkle over lime leaves, chilli and shallots.

Combine lime juice with sweet chilli sauce and drizzle a little over each prawn.

Garnish with coriander and peanuts.
